Foodie Friday: Miss Robbie's Cool Whip Banana Pudding



It's time for......Bubble Guppies!  

No wait, just kidding.  We watch way too much Bubble Guppies in this household now.  Any time I hear the phrase "It's time for" I'm inclined to respond with "Bubble Guppies" and then break out into a rousing rendition of their theme song.  Just as I am inclined to sing the "Outside" song every time we go outside to play.  You know what song I'm talking about.  This one:

It's time for.....Bubble Guppies!   Dang it, I just can't help myself.  :)

No, seriously.  It's time for Foodie Friday!  This week I'm featuring a dessert my Mom made a few weeks ago when my cousin and her now-fiance (congrats!!) were visiting from New Jersey.  Jason liked it so much he was trying to get me to confiscate the dish and bring the rest of it home with us.  I finally got around to making some at home last weekend and we've been enjoying it all week.

Miss Robbie's Cool Whip Banana Pudding

Ingredients:
  • 12 oz vanilla wafers (approx. 1 box, may use more for trimming the bowl)
  • 4-6 bananas
  • 1 box of Jello instant vanilla pudding
  • 1/2 cup of sugar
  • 2 Tbsp vanilla flavoring
  • 1 cup of whole milk
  • 1 large 16oz tub or 2x 8 oz tubs of Cool Whip

Directions:

Mix the sugar and pudding in a bowl with the milk and the vanilla flavoring. Let thicken.

Add 1/2 the tub of Cool Whip. Stir well until fluffy.

Layer bottom of a trifle bowl or 9 x 13 pan with vanilla wafers.

Next layer is 2 or 3 cut bananas

Next layer is 1/2 of the pudding mixture. 

Next layer is vanilla wafers. 

Next layer is the last 2 or 3 cut bananas. 

Pour rest of pudding mixture over that. 

Top with a final layer of Cool Whip. 

Chill and serve! 


Sorry, no picture this week.  I was too busy eating this to stop and take a picture.  I'm not exactly sure where Mom got the recipe from, but I was able to find it on Oprah's website.  Enjoy! :)

Another Smith Family Blog


I started this blog as a way to keep family and friends, near and far, up-to-speed on what was going on with Jackson. Jackson was born with Spina Bifida and Hydrocephalus. When he was born, he had to have surgery to close the lesion on his back and then had a follow-up a month later for his shunt placement. My goal was to make sure everyone got an updateon how things were going and what better way to mass-update then the good ole interweb ;) And since everyone isn't on FB (WHAT!?!), I figured that a blog would be the next best thing.


Since then, the blog has morphed into a plethora of stuff ranging from date nights, favorite recipes (okay, haven't posted any recipes yet, but they are in the works), our dog, our house, my awesome hubby, projects from Pinterest that I actually complete, SB awareness and what's going on in Jackson's world. I'll be honest, it's 73% about Jackson and raising a child with SB, at least according to my last calculation. Oh, and pictures. Lots of pictures.

I’m a notorious procrastinator, a Martha Stewart wanna-be (minus the orange jump suit), and I have a high attention to detail, although some people might just consider me a control freak, perfectionist pain-in-the-arse! Oh yeah, and I’m a tad sarcastic. I've been married to my best friend for 5 years and we have one amazing little toddler, Jax. Our other "baby" is a 4 year old Great Dane who thinks he's a lap-dog. All in all, I love my life!
