Blue Orange Green Pink Purple

Welcome! Welcome!

So, what’s my blog about? A little bit of this, a little bit of that, tons about Jackson and a sprinkle of Spina Bifida awareness. Why? Because that’s our life and we want to share it with you. Hope you enjoy!

Most Popular Post!

  • He's Here!!!
So, on Monday Jackson was super active, like rolling, flipping, kicking all day.  It was the weirdest thing.  He had never been that active....

What a Day!

Usually I post things in chronological order (because I'm OCD like that), but I've decided to go against the grain and share with you what happened at Jackson's ortho appointment a couple weeks ago.

It was a busy, busy day.  Originally we were supposed to have 3 appointments in Rochester, but Neuro had to cancel due to a last minute surgery.  So that left us with Ortho and Fonte (Jax's equipment provider) and a big gap in between!

Ortho was bright and early this morning - a 6 month follow-up for Jax's scoliosis.  He is supposed to be wearing his TLSO 23 hours a day.  Ha!  Good luck with that.  We've attempted but are no where near that goal.  The Ortho reiterated the importance of wearing the brace and we are going to try to be better about it.  We had been having him wear it at night so he was getting a solid 8 -10 hours in it, but he's been battling a cold for a little while and the brace made coughing/breathing a little uncomfortable.  But, he needs to be in it more.  The brace is what is helping to prevent the curvature in his spine to get any worse.  The worse it gets, the more likely it will be that he will need surgery to help correct/stabilize it.  And nobody wants that!  Surgery is the pits.  :(

Hopefully when he gets his new one, it will be a little more comfortable and he can adjust quickly to being in it more.  Oh wait, I jumped the gun didn't I?  Dr. Sanders (Ortho) believes that he's outgrown this one and it's time for a new one.  He actually got fitted for it yesterday and we're picking it up on December 19th (more about that later).  We learned that with his brace on his curvature was measuring at 24 degrees, which is higher than what it was 6 months ago, further proving that he not only needed to wear it more, but also showed that the current one was correcting as well as it had been.

We also learned a little more about what Dr. Sanders believes Jackson's functional levels to be.  His actual level of Spina Bifida is L5.  That is where the lesion was.  However, he functions at a different level (and different on both sides of his body too).  It is believed that Jackson's left side functions at an L4-L5 level and his right side functions at an L-3-L4 level.  Confused?  That's okay, it happens.  Basically, the lower extremities/muscles in his lower body are functioning a tad higher than his left side.  He has more strength/function in his quads and hip adductors on that side, among other stuff.

Still confused?  Seriously, it's okay.  I don't blame you.  If I wasn't directly involved here, I'd probably be stumped too.  But, I found a really cool blog post over at I Want to Learn About Spina Bifida that explains the difference between actual vs. functional levels and provides some great visuals to put it all together.

Let's see, what else was discussed?  Hmmm, nothing special or exciting....

JUST KIDDING!!!!  Dr. Sanders said it's time to get this kid up and moving.  So that means - NEW LEG BRACES!!!!!!!!!!!!!

Why am I so excited?  The new braces are called HKAFOs.  That's a whole lot more letters than his current AFOs.  Let's examine this a little more.  HKAFOs are Hip-Knee-Ankle-Foot Orthotics.  When worn, these bad boys will help stabilize Jackson not only at the hip and pelvis, but as his knees as well and will aid in standing and walking.  That's right, people - STANDING AND WALKING!  Woo hoo!  We're so excited.  It will still take a lot of therapy and work to get Jackson in a standing position and then walking, but this is a sign of progress and we're so thankful for it!  He got fitted for these as well yesterday (more about that experience later).

Here's an example of what the HKAFOs will look like.  They will be jointed at the knees.  The only real difference between the ones here and Jackson's will be that the hip part will be a leather strap.  If it turns out that Jackson needs more support at the hip, there is the possibility of upcycling his old TLSO and fitting it as the hip section.  But we'll know more after we pick them up.

The design will be different too.  I'll unveil that later with the details on his fitting appointment.   That, and I haven't showed Jason yet.  If he doesn't know yet, neither can you all.  ;)

We had some time to kill in between our Ortho appointment and our appointment at Fonte, so Jason, Jackson and I walked around the mall for a little bit.  Jackson's favorite part was visiting the pet store and seeing the "meows" and "dogs".  We also grabbed a bite to eat at Red Robin (yum!).  Even after all of that, we had another hour and a half so we stopped at the Zoo.  It's less than 5 minutes from Fonte's store and we have a membership, plus the weather was great that day.  As it turns out, it was an EXCELLENT day to visit the Zoo.  Not hot, not crowded and the animals were all out!  With the exception of about 10 other people that we saw, we had the place to ourselves.  Loved that!  Here are a few pics from our visit to the zoo:

I had two seconds to snap the pic.  He was ready to go look at more animals!
Jax and Mommy

His favorite part of the zoo - the bus had a ramp to fly down.  He was having a blast.  A future wheelchair BMX champ, maybe?

It was even fun to run into Daddy!

By the time we got to Fonte, Jax was tired and well past ready for a nap, so he was a tad cranky.  But, he did great during his equipment adjustments.  He needed to get the knee braces in his stander moved up because they were no longer in the right spot.  He'd grown so much that they were digging into his upper legs rather than cradling his knees.  They also moved his the back portion of his wheelchair back a couple of inches so he can sit further back in his chair and access more of the wheels when he pushes.

Despite being a little crankpot, he had a good time going in the back and saying hello to all of the wonderful staff at Fonte.  He even decided it was a good idea to barge in on the big wigs during a meeting.  Just pushed the door open and said hi!  I think they welcomed the interruption though, lol.

So, our day was busy busy but very productive and a little fun too!  Can't wait for the new braces to come in.  I'm pretty sure I'm more excited for them than Jax will be when he gets them.  ;)

'Til next time,

Pumpkin Patch Visit

It's October!  Do you know what that means!?  It's Pick'n Patch time!  Each year we go to the Pick'n Patch in Stanley for a few hours of good, family fun time.  Here are a few pics from this year's trip.

Jax and his cousins

Going through the maze with Aunt Denise

Pondering life's larger questions

<3 my little family!

"Sheep!  Sheep!"

"I've got my eyes on you!"  (watching his cousins jump on the big, jumping pillow)

How many Grandmas does it take to feed a sheep and capture the memory?  ;)

He really liked feeding the animals!
How Tall This Fall, Jackson?
Checking out the gourds with Grandpa

Jackson seemed to have much more fun this year.  I'm sure it has to do with the fact that he could get around more by himself.  The past two years he was in a stroller, but this year he had his own wheels.

Here's a little collage of all of our family pics at the Pick'n Patch for the last three years.  I can't believe how much Jackson has grown.  He's growing up so fast.  *tear

Meet Opie!

Jax has a new friend!  Well, he's had him since the beginning of July.  His name is Opie!

Opie the Monkey

Jax and Opie

Jax got a Build-A-Bear gift card for his birthday and we finally went and used it.  For his first birthday, Jax got a cow named Bob the Bull.

Jax and Bob the Bull on his first birthday
This year he picked out a monkey.  Daddy named it Opie.

Jax found the cupboards behind the sales counter very appealing

We wanted to make Opie special, just like Jax.  My Mom helped us out and stitched "scars" on Opie in all the same places that Jax has scars.  We also decked him out in Jax's first pair of AFOs and glasses.  We are also working on making him his very own TLSO, just like Jax.

Notice the scar?  Opie also has two on his head and one on his back, just like Jax

Opie even has a wheelchair and a camo backpack, just like Jax.

I think Jax likes Opie as much as we do!

Peace out!

Foodie Friday: Grandma King's Chopped Apple Cake

Foodie Friday is back!  Did you miss it?

To be honest, we've been so busy lately that I haven't taken the time to venture over to Pinterest and actually choose a new recipe to try out.  And I didn't think anyone would really be interested in a recipe on how to make Kraft Macaroni and Cheese or a post on how to grill a hot dog or hamburger.  :-P

But, alas, fall is here and so is my inkling to bake and be merry!  One year for Christmas, my Mom made each of my sisters and I a recipe box filled with all of our family recipes.  I think most, if not all, are baked goods.  What can I say?  We are a family of bakers.  I have yet to perfect my Grandma's pie crust (my sister is the expert!) but I think I'm going to work on that this fall/winter.  I'm sure Jason and Jackson would be okay with that.

I bought a bunch of apples and never did anything with them and happened to glance over at that recipe box from my Mom and realized my Grandma has an excellent recipe for a chopped apple cake.  And that's what I made last weekend.  We've been enjoying it all week!

My Mom hand wrote three copies of each of these recipes!

Here's the full recipe:

Grandma King's Chopped Apple Cake

Ingredients:
(cake)
  • 1 Cup Oil
  • 2 Cups Sugar
  • 3 Cups Peeled, Cored, Chopped Apples
  • 2 Eggs
  • 2 Tsp. Vanilla
  • 2 1/2 Cups Flour
  • 1 1/2 Tsp. Baking Soda
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Cinnamon
  • 1/2 Tsp. Chopped Walnuts
(topping)
  • I Cup Brown Sugar
  • 3/4 Cup Water
  • 3 Tbsp. Flour
  • 1 Tbsp. Butter

Directions:
  • Preheat oven to 350 degrees.
  • Mix together apples, sugar and oil.
  • Beat in eggs and vanilla.
  • Mix together dry ingredients in a small bowl.
  • Combine apple mixture and dry ingredients and add walnuts.
  • Pour into buttered cake pan.
  • Bake for 30-40 minutes.
  • For topping: Combine ingredients in a sauce pan and cook on stove top until thick.  Pour over cake when removed from oven.

Chopped Apple Cake!  Yum!

You should try it, I know you'll like it!

Enjoy and Happy Fall!

Hey, Where'd September Go?

I mean seriously.  I feel like I blinked and I missed it.  September flew by sooooo fast!  I guess staying busy keeps us out of trouble, right?  ;)

We started out our month by visiting a local Mennonite family that has a child who was born with Spina Bifida.  We met through GRSBA (Greater Rochester Spina Bifida Association).  They found out that we lived near them and the mother invited us over to visit.  We spent the afternoon getting to know both the parents and son (who is much older than Jackson - he's 28 now, I believe) and learned a lot about how they raised their son.  I found them to be extremely resourceful (the father actually built their son what we would call a mobile stander - like Jax has now!) and they provided a very interesting perspective on how to raise a child with special needs.  We learned all about how they made their home accessible and also learned about how they still instilled a strong work ethic and sought to include him as much as possible.

Inclusion is a key ingredient to the overall health and happiness of a special needs child, in my opinion.  In fact, I just attended a consortium on early planning for families with special needs children last Thursday and inclusion was discussed at length.  I could go on and on about that, but.....I digress.

Jax (and us as well) had a great time.  Jax got to eat some cookies, play fetch with their dogs (who actually retrieves AND returns the ball to you - something Duke will not do), ride on a beautifully-made airplane rocking horse, play with some of the awesome toys that their son hand-carves out of wood, and even got to enjoy a ride in their horse and buggy.  They even let him steer the horses for a little bit.  :-)  He also left with a copy of a short book that the mother wrote about having a son with special needs.  The characters in the book were based on her family, but child in the book did not have Spina Bifida.  I can't wait to go visit them again.

Happy 100th Post!

I feel as though I should've reached this momentous milestone a long time ago, but I'm so happy to report that this is my 100th post!

Most of you may not know this, but I actually created this blog in 2007.  I don't know why I did.  I guess I thought it would be cool to have one.  Turns out I didn't really have anything to write about.  Or at least anything that I thought people would actually want to read about.  That is, until one very special boy came into our lives.

After Jackson's diagnosis I decided that I could either use Facebook to keep everyone updated on his diagnosis, delivery, surgeries, therapies, etc, etc, etc or I could go another route.  Then the light bulb went off - you already have a blog genius!  (I've got to admit here that it wasn't an instant realization.  I kinda forgot the blog's existence.  Which to some of you shouldn't surprise you in the least).  Not only does the blog keep everyone with Internet access updated but I can use it as an online scrapbook, so to speak.  I can easily find entries that I've posted here without having to scroll endlessly through my Facebook timeline that's inevitably cluttered with pictures, pictures, more pictures and sarcastic memes.  Hey, what can I say?  I'm a sarcastic, smart-ass.  You know it, you love it, get over it.  :)

Anywho, I'm completely honored that so many of my friends and family have enjoyed perusing the blog and partaking in my ramblings.  6,000 page views to date!  That's exciting!  I can't wait to see what the next 100 posts bring!  ;)

Stay tuned for updates on all of the Smith Family Fun that happened in September - including trying out a hand bike at the GRSBA picnic!

Peace out.  This chick needs to catch some Zzzzz's!

IFSP Update - 24 Months (The "Details")

As promised, here's a rundown of the progress reports from Jackson's latest IFSP meeting.  Grab a drink, pick out a snack and get comfortable because this is a long one.  :)

(Unless otherwise noted, everything written below is taking directly from the reports)

Physical Therapy

Summary - Jackson is a delightful little boy who continues to make progress with his gross motor skills.  He has worked hard at developing his trunk strength and is able to sit independently.  He is able to transition independently from the floor to a sitting position.  Jackson is able to commando crawl with evidence of some hip muscle recruitment and his upper extremities.  He has shown progress with his strength and endurance when in all fours and has consistently been improving with his ability to hold all fours independently and to weight shift from side to side while reaching or engaging in an upper extremity activity.  Transitioning into all fours continues to be challenging and he continues to require assist.  Jackson has also been working to sit to stand with assist at a supportive surface to promote his LE strength.  He obtained a dynamic mobile stander and a wheelchair and presents with a good ability to negotiate both devices around his environment.  He is wearing his AFOs daily and recently has started wearing a TLSO mostly at night and intermittently during the day to address his Scoliosis.

Gross Motor Summary - (gross motor skills are at greater than 33% delay)
  • In the area of stationary skills, Jackson scored at the 11 month level indicating below average skills in this area.  Jackson was able to rise to a sitting position from his back and stomach to get a toy without difficulty.  He was also unable to maintain a high kneeling position due to decreased trunk strength and lower extremity weakness.
  • In the area of locomotion skills, Jackson scored at a 7 month level representing below average skills in this area.  Jackson is able to roll from his back to stomach and can move forward commando crawling at greater than 3 feet.  He is starting to raise his hips while lying on his stomach, but is unable to get into an all fours position without assistance or creep on all fours at this time.
  • In the area of object manipulation, Jackson scored at a 12 month level indicating a delay in age appropriate skills.  Jackson was able to catch a ball while in a sitting position and roll it at least 3 feet using hand/arm contact.  Jackson demonstrates emergence of ball skills when flinging a ball while standing in a mobile stander.
Goals for the Next Six Months -
  • Jackson will transition to an all fours position independently.
  • Jackson will begin to creep with assist.
  • Jackson will begin to pull to stand with assist.
  • Jackson will throw a small ball overhead at least three feet while in the mobile stander.
  • Jackson will be able to navigate around obstacles for approximately 20 feet independently while in the wheelchair.

IFSP Updates - 24 Months

In looking back at my previous posts, I realized that I never gave you all an update on Jackson's 24-month IFSP meeting.  It was held back in July and there were 4 therapists, 1 service coordinator, 1 county official, 1 Mommy, 1 Grandma, 1 Grandpa and 1 Jackson in attendance.  Jackson's speech therapist wasn't able to make the meeting but did provide a progress report.

Jackson held court at the head of the conference room table the whole time, making sure that a few ladies had a good handle on all of their paperwork.  That is, until he saw the cupboards along the wall and then proceeded to open and close the drawers with gusto.

The overall consensus is that Jackson has been making great progress in all functional areas (adaptive, cognitive, communication, social emotional and physical) but is still considered to be developmentally delayed by about 33% (or more) in most cases.  This was not a surprise for us.  We've been in constant contact with his therapists all along and can see on our own how's he progressing.  We're extremely proud of him (as are all of his therapists - they adore him!).

Much of his IFSP remains the same for the next six months.  The two major changes are that OT (Occupational Therapy) is getting bumped up to twice a week and his Developmental Group at Happiness House (preschool) will now be three mornings a week instead of two.  We're at the point now where we need to be extremely mindful of whether we're putting Jackson into therapy overload.  As it stands, this is his current therapy session rundown:
  • Physical Therapy - twice a week (at home)
  • Occupational Therapy - twice a week (at home)
  • Special Ed Therapy - once a week (at home)
  • Developmental Toddler Group - three mornings a week (at Happiness House)
  • Speech Therapy - twice a week (while at Happiness House)

Wow! What a Summer!

Shhhh!  Don't tell anyone but I finally got a free moment to myself and figured I'd take a little time to chronicle all of the fun things we did this summer.  I can't believe it's September already.  Time sure flies when you're having fun, right?  ;)

Sit down and get comfortable, this is going to be a long one!  But it's more pics and less blabber than usual so that's got to count for something, right?

Now, where to begin?  Let's see.....

Jason's "New" Ride(s)

Okay, it's not so much new as it is newly customized.  Jason has been wanting to put ape hangers on his Harley ever since he bought it last year.  And now, finally, they are on and it looks awesome!

Love my biker man!

While we said "hello" to new ape-hangers, we also had to say "good-bye" to Jason's truck.  :'(

Project: Pinterest - Therapist/Teacher Appreciation Gifts

As the "school-year" came to an end in June for Jackson, I thought it would be nice to make all of his teachers, therapists and service coordinators a little "thank-you" gift for all of the hard work that they do.

So, off to Pinterest I went in search of a cute, easy and affordable gift that I could make for all nine of them.  Yes, nine of them!  My search led me to Giggles Galore where they featured an adorable flower pot along with free printables.

So, I grabbed some terra cotta pots from JoAnn's (with a coupon - score!), some chalkboard paint, yellow paint and some cute flowers from Horning's Greenhouse, threw it all together and out popped these:

I thought it was fairly easy and not too time-consuming.  I ended up using a Sharpie to make the ruler markings.  Much faster than attempting to paint it on with a paintbrush.  Jackson didn't help me this time with the gifts because in true "Robin-fashion" - I waited until the last minute to put them together.  But next time I'm going to find something that he can help me with.

Spokes for Spina Bifida

The 2nd Annual Spokes for Spina Bifida Motorcycle and Classic Car Poker Run took place on June 22 and we were so excited to be able to participate this year.  This event combines three of our favorite things - motorcycles, food and GRSBA!  Plus, it raises money for a great cause.  Actually, two great causes this year - GRSBA and Rochester Rookies.

What are these two organizations, you ask?  GRSBA I've talked about before.  It's the Greater Rochester Spina Bifida Association, an organization that provides support to over 100 local families that have a loved one with Spina Bifida.  The Rochester Rookies is an organization that offers children with physical disabilities ages 6 to 22 the opportunity to participate in recreational and competitive wheelchair and ambulatory sports.

Father's Day 2013: Golf, Pancakes and Ice Cream!

Golf, Pancakes and Ice Cream.  That sounds like a winning combination, right?  For Father's Day this year I thought it'd be fun for the guys to go out and do a manly activity together.  And what's more manly than golf?  Okay, I can think of a few things that are manlier than golf, but you get the idea.

Jason, his Dad, my Dad and Jackson hit up the driving range in Geneva and swung at a couple of buckets of balls on that Saturday.  I thought Jackson would have a good time watching them, and he did!  They even let him get in on the action which he loved too.  And with all the guys away, I got to enjoy an hour or two of solitude at home.  Win, win for everyone!

I made them take a camera along and snap some pics.  Here are a couple of my favorites:

Next up was opening Daddy's present on Father's Day morning.  Jackson got Daddy a bunch of Duck Dynasty stuff - the book "Happy, Happy, Happy" by Phil Robertson, a "Happy, Happy, Happy" t-shirt and a "Happy, Happy, Happy" poster to hang in his garage all to go along with the "Happy, Happy, Happy" flip-flops he had bought himself a few days prior.  Can you tell we like Duck Dynasty in this house?  C'mon, it's hilarious!  How could you now like it?

Foodie Friday: Wine Tasting Party

I'm sure all of my avid followers noticed that I didn't do a Foodie Friday post last week.  Right!?  Please tell me you noticed or else I'll get a complex that no one reads this thing.  ;)

It turns out I was too busy enjoying food and wine to actually post about it.  Let me tell you - if you never been to or hosted a Wine Tasting Party, then you are missing out my friend.  It's a blast and a great way to sample wines you wouldn't normally buy yourself.

Here's how I suggest you do it.  Invite 4 -5 of your friends over and have them all bring a bottle of wine.  It can be their favorite wine or one that they want to try.  I know that only including 4 or 5 people may seem a little unfair to others but I'm just thinking about everyone's safety here.  You're going to be sampling from at least 6 bottles of wine.  Any more than that and you'll need to be hosting a sleepover or sweet-talking someone into being a designated driver.  I don't know about you, but I like to sleep in my own bed.  ;)  We ended up with 7 bottles as a few of us brought multiple bottles.

Now, add some food and a blindfold and you're all set.  <--- Get your minds out of the gutter.  To make it interesting, take turns trying each wine while blindfolded and rate what you are drinking.  Switch up the order of wines each time so that no one knows what they are tasting.  It will be fun for the taster because they need to use different senses to sample the wine and the rest of you will love to watch their faces.  Especially when it's a wine that no one likes - like the Birthday Cake Cheesecake wine.  That was the unanimous loser this time around.

I know that I love Moscato, but it turns out after the blind taste test I ranked 4th.  In my defense, I really haven't tried that many wines and once I found Moscato I stuck with it.  But now I have at least three more that I know I'll enjoy.

My Two Mr. Green Thumbs

Jason finally succumbed to the peer wife pressure of gardening last year.  I had mentioned several times since we moved into our house that I wanted to do a little veggie garden and he had always protested.  Up until last year, when he decided that doing a little garden would be a good idea.  It was nothing huge.  Just a few raised bed gardens made out of pallets with some tomatoes, zucchini, squash, peppers and cucumbers.  We even did some pumpkins that Jackson and his cousins ended up painting.  I'm not sure what changed his mind, but I think it was the fact that he could water the garden while laying down:

This year, he decided to go a little bigger.  We used the same three raised beds and then added another section over by the neighbor's corn field.  I think we still have all of the above-mentioned veggies, just more of them.  We haven't gone full-blown green-thumbs, whereas we started out with seeds.  We'll get there eventually, but for now we started with plants from Beacon's Farm Market and I think we also got some from one of the Mennonite stores in the area.

Jackson and Daddy had fun planting the garden.  Really, Jackson had more fun chewing on the gardening tools that Grandma and Grandpa got him for his birthday.  But, it was some fun, family bonding time spent outside in the sun.  Can't complain about that, right?

Jackson's New Glasses!

We had been struggling for a few weeks with Jackson refusing to wear his glasses.  Like, ripping them off as soon as we tried to put them on.  To be honest, it's never been easy to get him to wear his glasses for long periods of time.  He is two, so I realize that will factor into it but I had hoped that by having them for over a year now he'd be more used to them.  I had thought this most recent bout of "I'm-not-gonna-wear-them-you-can't-make-me" was just like all the rest, but it turns out I was wrong.

We had a regularly-scheduled follow-up with Dr. Markowitz at OcuSight Eye Care Center in the middle of June just to see how Jackson was doing wearing his glasses and to check on his astigmatism.

Allow me a minute or two to provide you with some background.  It was suggested by one of his therapists to get Jackson's ears and eyes tested in late 2011/early 2012 to see if either could be causing his developmental delays with regards to tracking.  His ears checked out fine, so he's obviously ignoring me when I tell him "No, please".  :P

When we met with Dr. Markowitz for the initial consultation it was discovered that Jackson has astigmatism in both of his eyes.  He is neither near-sighted or far-sighted, it's just that his vision is a little blurry overall.  We were told that this is not related to his Spina Bifida or Hydrocephalus.  There had been some concern that the increased pressure in the brain due to the Hydro may have caused some optical nerve damage, but that was not the case at all.

We've often been asked how the doctors know whether or not Jackson needed glasses or how they knew what prescription he needs.  I explained it a little bit in a prior post.  So, go here to read a little bit how Dr. Markowitz determined Jackson's prescription.  You can also go check out this link which does an excellent job of describing what happens during a children's eye exam.

Foodie Friday: Miss Robbie's Cool Whip Banana Pudding

It's time for......Bubble Guppies!

No wait, just kidding.  We watch way too much Bubble Guppies in this household now.  Any time I hear the phrase "It's time for" I'm inclined to respond with "Bubble Guppies" and then break out into a rousing rendition of their theme song.  Just as I am inclined to sing the "Outside" song every time we go outside to play.  You know what song I'm talking about.  This one:

Okay, back on track.

It's time for.....Bubble Guppies!   Dang it, I just can't help myself.  :)

No, seriously.  It's time for Foodie Friday!  This week I'm featuring a dessert my Mom made a few weeks ago when my cousin and her now-fiance (congrats!!) were visiting from New Jersey.  Jason liked it so much he was trying to get me to confiscate the dish and bring the rest of it home with us.  I finally got around to making some at home last weekend and we've been enjoying it all week.

Miss Robbie's Cool Whip Banana Pudding

Ingredients:
  • 12 oz vanilla wafers (approx. 1 box, may use more for trimming the bowl)
  • 4-6 bananas
  • 1 box of Jello instant vanilla pudding
  • 1/2 cup of sugar
  • 2 Tbsp vanilla flavoring
  • 1 cup of whole milk
  • 1 large 16oz tub or 2x 8 oz tubs of Cool Whip

Directions:

Mix the sugar and pudding in a bowl with the milk and the vanilla flavoring. Let thicken.

Add 1/2 the tub of Cool Whip. Stir well until fluffy.

Layer bottom of a trifle bowl or 9 x 13 pan with vanilla wafers.

Next layer is 2 or 3 cut bananas

Next layer is 1/2 of the pudding mixture.

Next layer is vanilla wafers.

Next layer is the last 2 or 3 cut bananas.

Pour rest of pudding mixture over that.

Top with a final layer of Cool Whip.

Chill and serve!

Sorry, no picture this week.  I was too busy eating this to stop and take a picture.  I'm not exactly sure where Mom got the recipe from, but I was able to find it on Oprah's website.  Enjoy! :)

Foodie Friday: Super Secret Cupcake Frosting

When given the option between making a cake and making cupcakes, I choose cupcakes every time.  I find them so much easier to decorate - the larger space of a cake gives me anxiety.  It's easier for me to be more creative on a smaller surface.  There's too much space on a cake to come up with a theme that doesn't look amateurish (<--is that even a word?) and my decorator handwriting leaves something to be desired.

I find it super-fun to use my decorator tool and while you can use it to decorate a cake, I'm just not that into it for that purpose.  For cupcakes, heck yeah!  I just picked up this one from Bed, Bath and Beyond because my other one broke.  Waahhhh!  :(  Actually, Jason broke it.  Because even he likes to decorate cupcakes!

With that being said, using regular old frosting for my cupcakes is just not sufficient.  This decorator do-hickey dispenses an over-abundance of frosting on top of the cupcake, so it's not cost-effective to buy those little tubs of frosting.  It's so much easier, and cheaper, to make your own frosting.  I found this recipe a long time ago on All Recipes (you know, that website you went to for recipes before Pinterest came along).  I've been using it for a long time and everyone always asks me for the recipe.  So, now you can find it right here on my blog.  One more reason to stop by and visit.

Another Smith Family Blog

I started this blog as a way to keep family and friends, near and far, up-to-speed on what was going on with Jackson. Jackson was born with Spina Bifida and Hydrocephalus. When he was born, he had to have surgery to close the lesion on his back and then had a follow-up a month later for his shunt placement. My goal was to make sure everyone got an updateon how things were going and what better way to mass-update then the good ole interweb ;) And since everyone isn't on FB (WHAT!?!), I figured that a blog would be the next best thing.

Since then, the blog has morphed into a plethora of stuff ranging from date nights, favorite recipes (okay, haven't posted any recipes yet, but they are in the works), our dog, our house, my awesome hubby, projects from Pinterest that I actually complete, SB awareness and what's going on in Jackson's world. I'll be honest, it's 73% about Jackson and raising a child with SB, at least according to my last calculation. Oh, and pictures. Lots of pictures.

About Me

Robin
Gorham, New York, United States
I’m a notorious procrastinator, a Martha Stewart wanna-be (minus the orange jump suit), and I have a high attention to detail, although some people might just consider me a control freak, perfectionist pain-in-the-arse! Oh yeah, and I’m a tad sarcastic. I've been married to my best friend for 5 years and we have one amazing little toddler, Jax. Our other "baby" is a 4 year old Great Dane who thinks he's a lap-dog. All in all, I love my life!
